Spanish Baby Octopus – Recipe

This is a typical recipe from any tapas bar in the North of Spain. The baby octopus can be found in Whole Foods at less than $6 per pound. A steal!!!

  • 3 tablespoons extra virgin olive oil
  • 1 pound baby octopus
  • 2 garlic cloves, 1 peeled and finely chopped and a other un-chopped
  • juice of 1/2 lemon
  • onions and capers
  • Sea salt

Step 1:

In a cast iron pan, heat 2 tablespoons of olive oil, with the non chopped garlic.Warm the olive oil, it will be infused by the garlic. You don’t want chopped garlic at this point, because it will burnt quicker and the olive oil will not be infused correctly.Cook the onion on this olive oil for 10 minutes, at low heat.

Step 2:

Place the baby octopuses in the pan and sear them, the key is to do not move them so the tentacles will get crunchy and crispy!!! 3 minutes on the tentacles and 2 on the other side.

Step 3:

lemon sauce preparation:Add the remaining 1 tablespoons of olive oil and the garlic to a small frying pan and saute for 20 seconds. After that add lemon and caper sauce.Serve octopus, dd seared onion and capers, pour this mix on the baby octopus.
Quick, cheap and easy!!
